Pups Food Truck Opens on State Street

Heads up food truckies: The vintage airstream trailer that recently appeared on State Street across from Lake Harbor doesn't sling feedlot franks or offer boutique poodle grooming. Though it's called Pups, this new mobile eatery offers a small but thoughtful selection of sandwiches and coffees.

"A lot of people pull through wanting corn dogs, but it's supposed to be a menu that uses seasonal produce, local/organic stuff, pastured eggs," explained owner Wes Coulter.

Coulter recently moved back to Boise from Portland, Ore., where he was tending 1,000 chickens and selling the eggs at a local farmers market. He picked up his trailer for $1,500 and opened up shop three weeks ago.

"There weren't any drive-through coffeehuts on the north side of State Street so I thought I was going to fill a niche, but really I don't sling that much coffee," Coulter said.

But he has been slinging lots of egg sandwiches ($3)—featuring a fried Malheur River Meats egg, cheese, whole-grain mustard and pickled jalapenos—and Pups BLTs ($4), packed with bacon, pickled asparagus, meatloaf and aioli.

"I might move. The action out here ... is kind of disappointing," said Coulter. "In Portland, people would flock to this kind of thing."

Pups is open from 7 a.m. to 7 p.m., Monday through Saturday, in the former Saladman location at 5310 W. State St.

the sandwiches here are really good and amazingly inexpensive

The pickled jalapeno are a special treat on the $3 egg sandwich. Egg sandwich & espresso for $4! WE should be flocking there. Plus, Wes is a believer in what he does which makes a huge difference in whatever you do!

I think he needs to do better on-the-street advertising. I drive past this nearly everyday and haven't really figured out what he is. The "Espresso//Farm Fresh Eggs" sign had me thinking that it was some sort of drive up farm-fresh market. Curiosity got the better of me and I googled Pups Boise and got this article. I've been searching for a place with breakfast sandwiches!! If I knew that this is what it was, I would have been in lots in the last month.
