Paleo Shack Makes Food Truck Rally Debut Tonight

Food truck fans tired of sliders and fried spuds now have a healthier option. Today, the Paleo Shack will cart its mostly organic lean meats and local veggies to the first anniversary of the Food Truck Rally, which takes place from 4-10 p.m. at 321 Grove St.

“The whole idea is to give people the option to eat healthy when they’re on the run,” explained Paleo Shack co-owner Brandon Rogers. “Especially for people that are trying to stay away from gluten and grains and dairy and things like that.”

Paleo Shack’s menu is a three-step process. First, you select from an assortment of baked veggies like Brussels sprouts, kale, collard greens, asparagus, beets, parsnips or sweet potatoes. Then, you pick a protein such as organic chicken thighs, grass-fed lean flank steak or wild Pacific-caught mahi mahi. And finally, you choose a sauce to drizzle on top, like coconut cream horseradish, Carolina BBQ or salsa verde.

“Everything is baked, and then right before it’s served, it’s all flash-fried … on a grill with coconut oil,” said Rogers.

John Tansey, Rogers’ business partner, will be manning Paleo Shack’s kitchen.

“So far, we’re just doing events,” said Rogers. “We’re working on finding a permanent location but that might not happen until next spring. … We’re always looking for stuff that’s CrossFit related, some kind of fitness, health and beauty expos.”

Rogers and Tansey ultimately hope to have three kiosk-style Paleo Shack locations around the Treasure Valley, and eventually expand into California.
