Brick 29 to Open Boise Food Truck

Boise Weekly learned today that chef/owner Dustan Bristol of Brick 29 in Nampa, along with the restaurant's sous chef Greg Lamm, plan to open a food truck in Boise in the coming weeks. The pair hope to have B29 open in under two months but are shooting for a more aggressive one-month opening.

Bristol and Lamm are the first pair of trained chefs to get into the street food business in Boise, perhaps finally kicking off what city foodies have long been waiting for: a street food scene like that in Portland, Ore., or San Francisco.

"I can't wait to get into it," Bristol told BW about the food truck business. "I can't wait to do kick-ass pulled pork sliders, chicken confit, pumpkin bisque."

Bristol's chicken confit, which BW has highlighted in the upcoming edition of our annual Restaurant Guide (on stands Wednesday, March 16), would be a steal, priced at only $6 at B29. As for a location, Bristol has one in mind for late nights but ultimately digs the idea of relying on social media to broadcast the truck's whereabouts.

Food trucks are taking over culinary scenes from New York City to Los Angeles, but aside from a grip of taco trucks and a smattering of trailers with comfort food and salad options, Boise has been more or less sitting out this food fad.
