The Boise Co-op Wine Shop is already a hit with North Enders, who have voted it to the top of BW's Best of Boise in the Best Local Wine Shop category for eight years running, but Co-op Marketing Director Mo Valko said plans are in the works to make the space an even bigger destination. In the late spring or early summer of 2018, the Co-op will unveil Uncorked!, an intimate, high-end wine bar attached to the shop that will pour some of the best bottles from Idaho and around the world.

"The wine industry is growing a lot, and we're just looking for a way to differentiate a little more," Valko said. "When we opened the wine shop nine years ago, it was pretty unique in the Boise area and there weren’t a lot of places to get a good selection of wine. And now, almost everybody has a pretty decent selection of wine. You can go to Rite Aid and find a decent bottle of wine."

Uncorked! could set the Co-op apart by giving customers even more access to the wisdom of the Wine Shop staff, who have more than 150 years of experience in the wine industry between them. It will also offer oenophiles a chance to taste the wine shop offerings before committing to a bottle.

"We will absolutely have Idaho wines available, [along with bottles from] Washington, Oregon, Italy, France, Africa, all over the world. And it will be rotating seasonally. At this point we’re looking at maybe having about a dozen or more [wines] available at any given time, in addition to having beer and cider on tap," Valko said.

The wine bar, which will take over a small space behind the Boise Co-op Pet Shop previously used for classes and storage, will also serve food. The menu isn't yet set in stone, but likely offerings include a cheese plate, an antipasto platter, green salads, seasonal soups and more—plus, customers can bring pizza, burritos or anything else they'd like over from the Co-op deli.

Uncorked! will be a small space, with seating for roughly 26 people at the bar, drink rail and small tables. In warm weather, a patio on Fort Street, where the main doors are located, will add additional space for guests.

When asked about decor for the wine bar, Valko said the Co-op team plans to use wine barrel staves and other repurposed materials throughout.

"It will be a pretty warm aesthetic, a lot of wood, maroons and blues, but then some industrial as well," she said. "The drink rail is going to be a polished concrete. We’re still making some choices about lighting and a few of those finer points will come as we move forward.”


The outside of the building will get a makeover as well. In early 2018, the Co-op plans to solicit proposals from the community for a new mural to be painted on the Fort Street side of the building, adding local color to the storefront. Though a concrete opening date for Uncorked! hasn't been set, the Co-op hopes to open the doors in May or June of next year.
