Boise Co-op Wine Shop Uncorks Wine Bar Called... What Else? Uncorked! 

Uncorked!, the Boise Co-op’s new wine bar and latest addition to its Fort Street family of community-owned stores, opened Friday, July 27.

The bar is modest, comfortably seating about two dozen people. Uncorked is actually tucked into the back corner of the Boise Co-op Wine Shop, with an entrance to the bar so unassuming that many people may come upon it by accident if they take a wrong turn on the way to the bathroom. But, to be sure, the bar is far more than it’s first impression.

According to Uncorked manager Sam Bauer, the idea evolved from conversations with Co-op patrons; they loved the Wine Shop, she said, and they wanted more. Bauer said “more” meant that they were looking for two essential elements: education and accessibility.

Bauer said Uncorked's staff is made up of self-professed “wine nerds,” all excited about wine and wanting to share that excitement with customers. Before opening, each staff member was given extensive training on the exact art of pouring, plus some critical geography lessons.

“You get to travel to a new place every time you drink a glass,” said Bauer. “So, education is important. We want people to feel empowered when they order something.”

Bauer added that in an effort to “stay interesting” in the Boise wine scene, Uncorked allows customers to buy wine in the shop, walk into the bar, and uncork it, as the name suggests, affording consumers a lovely ambiance and the option to enjoy some accompanying appetizers

Indeed, the wines come from all parts of the world but the food is sourced from very close to home. For example, a cheese board, complete with Idaho cheeses and a tart huckleberry jam is a featured item. As for wines from our region, customers are invited to try the so-called "Northwest flight," featuring wines from Idaho, Washington, and Oregon.

“The wine community is so strong and vibrant here,” said Bauer. “We wanted to create something for everyone.”

Uncorked hours will be Tuesdays through Thursdays, 3 p.m. - 9 p.m.; Fridays and Saturdays, 2 p.m. - 10 p.m.' Sundays, 12 p.m. - 8 p.m. and closed on Mondays.
