This free class covers canning acid foods like fruits, tomatoes and salsas, including sourcing safe recipes, safety and quality, selection and preparation, hot-pack vs. raw-pack, the best type of syrup for canning different fruits, the "hows" and "whys" of acidification of tomato products, how to safely adjust ingredients in a salsa recipe, canning fruit pie filling, detailed steps for successful boiling water canning, what to do when things go wrong, determining when home-canned foods are safe to eat, how to dispose of unsafe canned foods and troubleshooting. Demonstration will include canning tomatoes with three seasoning options. Call to register.
