C. Lodge, Sorry I didn't mention the butcher on Orchard directly. Probably could have, but there are now actually a lot of outlets for goat in Idaho and since these stories run under the heading "Year of Idaho Food" and are suppose to be a look at the food scene across the state—in this particular case the Magic Valley—I decided not to.

On the lox thing, I'm pretty sure that wasn't my review. Prove it and I'll apologize profusely!!!!

A Shepherd's Grain founder told me they have a no-GMO policy. Whether they'll be able to stick to that when GMO wheat hits the market is another story.

Here's another "local/artisanal" conundrum: In the Palouse wheat-growing region of North Idaho and Eastern Washington, a cooperative of small wheat farmers only have one choice when it comes to milling their wheat into flour—a mill owned by the industrial-ag behemoth Archer Daniels Midland Company.

A recent article in the Atlantic online asks of the situation "Can locally baked bread be called 'artisanal' if the wheat is from cooperatively farmed wheat fields that end up processed by ADM? What if the opposite were true: if the wheat were milled in an employee-run facility but came from the commodity markets?"

The author concludes that "Re-regionalizing our food system will surely mean creating new alliances, some with small entities wishing to grow bigger, some with large entities whose ways we often (rightly) criticize. Perhaps the most sustainable solutions will be those forged by individuals who need each other's support and resources, at interim steps along the way, regardless of the size of the entities they represent."

However you react to that writer's conclusion, the seemingly clear-cut labels of local and artisanal food are still a long way from being simple.

I'm not sure if it's always necessary to kill the fish, but these are "harvested" for their meat as well as their eggs.

Although I think there is much to be said for lessening humanity's reliance on animals for food, both domestic and wild, a great deal of research points to negative impacts on health and the environment caused by vegetable crops as well. Rice, or any grain grown where it shouldn't be grown stresses the environment; then there are the well publicized health issues and ongoing debate over soy and genetically modified soy; not to mention the animals and habitat destroyed to make room for vast vegetable monocultures. I think it has as much to do with agricultural ethics and stewardship as a choice between meat or plant based diets. Which ever we choose, there is no free lunch.
