I don't think this article would be as glowing around prison food if you had been served what the inmates get to eat on a daily basis. My husband is currently in prison and has sent me the nutritional information on their meals. The prisoners daily food consists of mostly carbohydrates and hardly any meat or dairy at all. In fact there was just recently a notice put up in the kitchen, you might have seen it on your visit, that they are reducing the amount of meat used by 30% and they are no longer offering milk to the inmates but a milk substitute. I get that these guys are doing time and it should be no picnic but we are not in a third world country they should get a decent meal at least once a day. As it is pretty much everything is either a carb or soy product of some sort. Another thing IDOC may not have shared with you is that on the weekends they don't feed the inmates lunch. Why? Your guess is as good as mine but I know I don't skip lunch on my weekend.
