An avid outdoorsman, my father has a story for nearly every hill, valley, river, reservoir, lake and coulee in Southern Idaho. He's spent hundreds of hours and driven thousands of miles across Idaho's desert plains and that kind of thing can make a man hungry, so he's also familiar with nearly every little eatery from the Nevada border to the edges of Oregon. In Buhl on an overcast Saturday, after a visit to the Hagerman Valley Dam as part of a sightseeing trip, our need for human fuel led us inside Jackson's Kountry Korner. From a booth in the corner, we surveyed the handful of diners, people who clearly had regular tables and regular orders. Our server said that people come from miles around for Jackson's home fries, and not one to question locals, we ordered them, supplemented with the day's special of ham and beans and cornbread.

Huge navy beans and chunks of ham floated through a translucent broth that was soon clouded by yellow crumbs because cornbread has to be dipped in soup whenever possible. I took a moment to come to terms with the size of the platter before me and then slid 6- or 8-inch hot, slightly sweet, skin-on fries through a pool of fry sauce. We waddled to the car after our meal but my father—hearty guy that he is—didn't blink an eye when I said, "Let's go get ice cream."
