In a recent interview, GravEyard cook Derek Freitag told Boise Weekly that downtown Boise's Lemon Tree is his "No. 1 spot" right now for sandwiches that cater to his plant-based diet—and according to Lemon Tree owner Jasson Parra, Freitag isn't alone.

During the day, Parra said, Lemon Tree serves roughly a 50/50 split of plant-based eaters and carnivores, but when the sandwich shop expanded to evening hours, the vast majority of the crowd that showed up was vegan or vegetarian.

"It's lowered a bit, but it's still a high percentage. I'd say it's about 80 percent [vegans and vegetarians] that come out in the evenings," Parra said.

So for Lemon Tree's first Tuesday Takeover on Sept. 18—a night when the restaurant switches gears to highlight a certain facet of Boise's food scene in partnership with local chefs, purveyors and foodies from 5-8 p.m.—Parra decided to give back to his base by featuring vegan and vegetarian eats.

Lemon Tree always has a robust veg-centric menu, including eight regular sandwiches (like one combining roasted Brussels sprouts and red peppers, apple-lime-pecan slaw, caramelized onions and whole-grain mustard on Acme Bakeshop bread) and one special. But for the takeover, Parra plans to add five additional plant-based sandwiches to the menu: three past specials that proved crowd favorites, and two that are brand new.

One of those, a vegan play on a crab cake sandwich made with hearts of palm and garbanzo beans, will come courtesy of local vegan blogger, health coach and Instagram star Jenn Williams, who goes by the screen name @thisishowyouvegan. And for those with a sweet tooth, Guru Donuts, Figgy Bakes and Sugar Whipped will provide dessert. Plus, guests can drink hard ciders from Meriwether Cider, and Violife will serve up its vegan cheese, which Lemon Tree uses in its sandwiches.

Guests don't have to prove a plant predilection to get in, but vegans and vegetarians will be the guests of honor—Parra said that for himself and the staff at Lemon Tree, the night will serve as a giant, edible thank you for their support.
