Listen Up: Foodfort 'Talks' Start Thursday, March 21 

Not only is Foodfort Boise's foodie headquarters while it's in town as part of Treefort Music Fest, it's also one of the few times of the year when Boise's brightest culinary gather under one roof (or sometimes, one tent). From that storm cloud comes Foodfort Talks, a series of panel discussions, workshops and food demos with chefs, restaurateurs, food bloggers and more. This year, the talks run Thursday-Friday, March 21-22, at The Basque Center.

The 2019 talks include three true panels (one on curbing food waste, one on the ins and outs of veganism, and a third on ethical food sourcing), an open-flame grilling demonstration from The Grill Dads, a display of top-notch knife skills by Chef Thomas Peace and an Eastern European cooking demonstration by visiting Portland, Oregon-based Chef Bonnie Morales. A fourth panel on the future of the Boise culinary scene was also on the initial schedule, but has since been cancelled.

As a bonus, Foodfort is also partnering with Kidfort for a 12:30 p.m. tortilla- and taco-making workshop at El Korah Shrine for children.

Thursday, March 21:
  • 11 a.m. - Totally Wasted! Future of Food Waste and Sustainability
    Panelists include CJ Pennington of Proud Source Water; Julie D’Agostino, owner of the food recovery business Rolling Tomato; Lea Rainey of Roots Zero Waste Market, a plastic-free grocery store/deli slated for Garden City; Michelle Kwak of KIN and ArtHaus Bar; and Sydney Bennett, a representative of the City of Boise's Department of Public Works.

  • 12:30 p.m. - Save the Planet: Go Vegan!
    The all-vegan panel includes social media personality Jenn Williams, Nexus Fitness Owner Kevin Scrima, vegan activist Kristen Pound and Treefort Co-founder Megan Stoll.

  • 2 p.m. - License to Grill: An Open-Flame Demo with The Grill Dads
    Mark Anderson and Ryan Fey, stars of The Food Network's The Grill Dads, will demonstrate their skills for a crowd.
Friday, March 22:
  • 11 a.m. - Bonnie Morales Food Demo
    Chef Bonnie Morales, chef/owner of Kachka and Kachinka in Portland, Oregon, specializes in dishes from Ukraine, Belarus, Georgia and Uzbekistan.

  • 11:30 p.m - Sourcing Matter with Aaron Niederhelman
    Panelists include OneHealthAg CEO and Co-founder Aaron Niederhelman, seed farmer Beth Rasgorshek of Canyon Bounty Farm, and KIN Chef Kris Komori.

  • 2 p.m. - Keep Sharp! Knife Skills with Shun
    Chef Thomas Peace, a regional sales rep for Shun Cutlery, will show off the proper way to slice and dice.
