Owners of Boise's The Wylder to Open a Bakery in Historic Hyde Park Space

You might think that after opening downtown pizza spot The Wylder in Boise's LIV District to resounding success in 2017, restaurateurs David and Lizzy Rex would look to repeat the concept at their newly acquired space in Hyde Park. Not so. Instead, the couple plans to transform the old Certified Cleaners storefront on 13th Street into a counter-service bakery.

"I think it's what that street needs," David said, explaining that he and Lizzy, who live just a block and a half from Hyde Park, have wanted to open a restaurant there since moving to Boise. "We feel like that's what's missing when we walk over there."

Dubbed Certified Kitchen + Bakery in a nod to the location's history, the restaurant will be small, with a walk-up counter and just enough space to seat 40. The menu will focus on a selection of "rustic" pastries, including muffins, cookies, whole or by-the-slice cakes and dessert breads ("nothing technical like laminated pastry," David said) and a few grab-and-go "butcher-style" sandwiches and salads.

Some salads and desserts from The Wylder will show up on the menu at Certified, and the LIV District restaurant's pizza dough will also make an appearance via its 52-year-old sourdough starter, which the Rexes plan to use along with organic flour for English muffins made in-house. Out of all the dishes he has planned, it's those sandwiches that have David most excited.

"It's the best egg sandwich that we can make. We think that the sourdough English muffins are really great. No one makes them, especially in-house," he said, pointing to a photo of an egg sandwich (shown above) topped with arugula, cheese, Fresno chilies and creme fresh.

Renovations on the space are already ongoing, and David said the first phase of Certified Kitchen + Bakery, emphasizing the pastries and sandwiches, and offering just breakfast and lunch, could be open as soon as this summer. Later, grab-and-go dinner items like lasagna and pot pie will appear on the menu.
