A word about classic martinis: they were originally stirred over ice. James Bond popularized the notion of "shaken, not stirred." This has, unfortunately, caught on, and is the default prep for many bartenders. The problem is that ice chips are generated that often are NOT strained out, resulting in random chunks of ice being sipped with one's gin - not a good thing for a purist martini lover.
