It is allways necessary to kill the fish in order to extract the caviar due to the fact that the eggs can acount for 15% of the fish's weight and can extend from a few inches behind the gills down to the lower abdomin. We don't "squeeze" the eggs out either. We use a sharp knife to cut open the belly of the sturgeon and then lift the eggs out.


This is just a picture of google images and is a much smaller fish than we would normaly harvest but it is a good ilitration of what happens.

As to the question of where to buy it, if you are in Idaho you can visit the proccessing plant itsself at the adress in the article above. Also Fish Breeders of Idaho/Fish Processors of Idaho are currently in the process of designing a website where, if you are still interested, I'm sure will be able to direct on how exactly to order.

And of course if you are in the area, I always love to stop by the catfish farm and take a look at the aligator pen. It isn't very often you can see aligators in Idaho but the heated geothermal water provides the perfect tempurature for them year round.
