Utah-Based Waffle Love Opens First Idaho Location in Meridian

The Utah-based waffle company Waffle Love has a coming of age story similar to Boise's own Waffle Me Up: What began as a family owned food truck slinging mile-high Belgian liege waffles evolved into a brick-and-mortar store and then, in Waffle Love's case, into a national franchise. And as of Dec. 1, the two companies became fairly close neighbors when Waffle Love opened its first Idaho outpost at the corner of Linder and McMillan roads in Meridian.

Waffle Love Franchise Owner Michael Bevans has never tried Waffle Me Up, which opened in downtown Boise in 2016, but he had heard good things about the company—and, of course, he's a fan of waffles, which is what drew him to bring his own waffle spot to the Boise area.

"It's a concept that had a great following, and they just had a killer menu," he said of Waffle Me Up.

From the sound of it, the magic is definitely in the waffles, which are made with a yeast dough and a sprinkling of pearl sugar that caramelizes as they bake. Bevans said the finished waffles have a chewy, bready texture that's mildly sweet, and though each waffle is "delicious just on its own," they also come topped with sweet or savory add-ons. Those range from fruit, whipped cream and Nutella (the Nutella Love) to grilled chicken, cheese, tomato, avocado and a sunny-side-up egg (the Chicken Avocado Tartine). There's even a grilled cheese waffle with Muenster and provolone baked inside to create a gooey masterpiece for customers to dunk in tomato bisque. Bevans also said a huckleberry waffle with Idaho-grown berries will join the menu soon.

In addition to Waffle Love, Bevans also brought Utah's customizable soda chain Sodalicious to the Treasure Valley, and runs its four locations as well as the new waffle shop.

"It's definitely a lot of work, but it's a lot of fun," he said.

And one final tasty tidbit: For customers looking to impress holiday visitors with their breakfast-making skills, Waffle Love offers dough balls (complete with baking instructions) to take home.
