Vegetarian Cooking Class

The vegetarian cooking class is led by seasoned recipe developer Karen Mangum. Mangum is a licensed, registered dietician, cookbook author and nutrition consultant. The menu consists of a roasted eggplant salad, artichoke and basil pesto pizza, spinach and cheese enchiladas, vegetable lasagna and for dessert, an apricot raisin bar.
